San Pellegrino rises from thermal springs in the Lombardy mountains north of Bergamo, where it has been bottled since 1899. The water spends three decades underground gathering a substantial mineral content before a measured carbonation is added. It is bottled at the source in San Pellegrino Terme.
Dissolved solids of 1,109 mg/L place San Pellegrino in the rich band, and the pH of 5.6 reflects its added carbonation. The high mineral content with a medium bead gives the full, rounded character noted above, with enough structure to hold its own at the table. It is a classic food water, suited to full meals and a wide range of dishes.
