Smeraldina is drawn from an artesian spring in the granite hills of northern Sardinia, rising under its own pressure without pumping. Despite a light carbonation it keeps a low mineral content and a soft character. It is bottled at the source on the island.
At 130 mg/L and pH 7.7, Smeraldina is light and close to neutral, unusual for a sparkling water. The modest mineral load keeps the clean, soft character noted above intact beneath the bubble. It works as an everyday sparkling water and with delicate food, where a heavier mineral water would intrude.
